1 1/2 c Edamame 3 tbs Olive Oil 1 tsp Salt 1/2 tsp Ground Cumin 2 peeled Garlic Cloves 1/2 c Fresh Parsley 5 tbs Tahini 5 tbs Water 2 tbs Fresh Lemon Juice 2 tbs Fresh Lime Juice
1) Cook edamame according to package instructions (don’t add salt). 2) Place oil, salt, cumin, and garlic in food processor. Pulse until coarsely chopped. 3) Add edamame, parsley, tahini, water, and juices. Process for about a minute or until smooth. 4) Spoon into serving serving bowl and serve with crackers or potato chips.
